GLOSSARY

Bisphenol-A:  Bisphenol A is a key building block of polycarbonate, which is a lightweight, high-performance plastic with countless practical uses. Bisphenol A is also a key constituent of epoxy resins, which are used as protective coatings on metal cans to maintain the quality of canned food and beverages.Unfortunately, the ester bond that links BPA monomers to one another to form a polymer is not stable and hence the polymer decays with time, releasing BPA into materials with which it comes into contact, for example food or water. Flax:  Flax Seed or Flax Oil. Flax oil is nutty-flavored oil that is pressed out of flax seeds and is one of the richest sources of Essential Fatty Acids (especially Omega-3 oil), a vital element for good health. The oil making process removes many of the seed's phytoestrogens which offer several health-related benefits including reducing the risk of cancer and alleviating menopausal symptoms. Many choose to use the whole seed because of its fiber and lignan content. Flaxseed oil is light- and temperature-sensitive and must be stored in the refrigerator.

Glycemic Index:  The glycemic index (GI) is a classification of foods based on their blood glucose-raising potential. Consuming foods high on the glycemic index promote a rapid rise in blood glucose. This contributes to the development of several chronic degenerative diseases.

Hydrogenated Fat:  Usually containing trans-fatty acids (or simply "trans" fats), hydrogenated fats show up mostly in margarine, shortening and many prepared and processed foods such as cookies, crackers, cakes, potato chips and other deep-fried foods. Manganese:  An essential mineral found in trace amounts in tissues of the body. Manganese is essential to several critical enzymes necessary for energy production, bone and blood formation, nerve function and protein metabolism. It is involved in the metabolism of fats and glucose, the production of cholesterol and it allows the body to use thiamine and Vitamin E. It is also involved in the building and degrading of proteins and nucleic acid, biogenic amine metabolism, which involves the transmitting of nerve impulses.
